PANEER MUTTER MASALA


INGREDIENTS

Paneer -100g

onion -3medium size

ginger -2''piece

green chilly-2(as per your choice)

tomato -2

green peas-100g

turmeric powder

jeera (roasted)powder-a pinch

PROCEDURE

Grind onion ginger and green chilly to a paste.

make tomato puree and keep aside.

heat oil ina kadai and add onion ginger chilly paste.saute it very well.then add tomato puree .fry it till the oil seperates out.now add turmeric ,salt,jeera powder.fry for some more time.then add water to make required consistency.add peas and allow it to cook well .then add paneer.let it simmer for 10 minutes.

DAL METHI


DAL METHI

tur dal -half a measure

methi leaves-1 bunch clened and cut in to small pieces

coconut - 2table spoon

jeera -half tea spoon

garlic -1 clove

turmeric powder -1 pinch

FOR TEMPERING

mustard

dry chilli

curry leaves

PROCEDURE

cook tur dal with turmeric and salt.make paste of coconut, chilli ,jeera and garlic.now add the paste and methi leaves to dal .allow it to boil.then let it simmer for 5 minutes.temper with mustard dry chilli and curry leaves.

RED PUMPKIN


Red pumkin curry

(a side dish with rice)

INGREDIENTS

red pumpkin half kg

pepper powder -half tea spoon

salt

curry leaves

dry chilli

mustard

brown rice -half tea spoon

PROCEDURE

cook red pumpkin with pepper powder and salt.now heat oil in a pan add mustard, dry chilli ,curry leaves,rice .fry well.add it to the red pumpkin.

CRAB MASALA



Ingredients


crab -2


coconut -1/2 a coconut


onion -1 small size


dry chilli -4-5nos


coriander seed -1 tea spoon


pepper -1/2 tea spoon


TEMPERING


curry leaves


ginger


mustard


PROCEDURE


clean the crab .cut in to pieces and marinate with turmeric powderand salt.


heat a kadai .roast dry chilli,coriander,pepper separately.now add some oil and saute onion and garlic .


grind the roasted ingredients ,onion garlic and coconut to a paste.


now cook crab withe the above paste ,add suficient water to make a gravy.


let it boil for some time .then allow it to simmer for 20 minutes .then do the tempering.

potato with roasted coriander

INGREDIENTS
potato -3 medium size
coconut (fresh) -2table spoon
coriander seed -2 table spoon
chilli powder -1 tea spoon
salt
curry leaves
garlic
PROCEDURE
CUT POTATO IN TO SMALL PIECES
roast coriander powder and powder it.then add 2 -3 cloves of garlic and give the mixer 1 run.keep it aside
now cook potato with chilli powder ,salt,curry leaves , turmeric powder and coconut.when it is properly cooked add the powder and mix it well.

egg kurma

INGREDIENTS

egg -4

coconut -4 table spoon

saunf -1 tea spoon

garlic -1 clove

green chilli 1

PROCEDURE

Boil eggs in a pressure cooker.(give one whistle or 2)

grind coconut sanf and garlic to a paste

heat oil in a kadai.splutter mustard.add the paste,curry leaves.let it boil.now add eggs and let it simmer for 5 minutes.

kichdi

INGREDIENTS
rice -1 measure
potato -1
carrot -1
onion -1
tomato -1
ginger 1.5 '' piece
jeera powder -1/2 tsp
chilli powder 1/2tsp
turmeric powder 1/2tsp
PROCEDURE
heat pressure cooker ,add oil.saute onion.ginger and all other vegetables.
then add a paste of all masalas.mix well.add rice and roasted moong dal .mix well .add 2.5 measures of water.give 2 whistle.
garnish with coriander leaves.



gooseberry rice

Follow the same procedure as that of mango rice.replace mango with goose berry (aamla)

LEMON RICE

Follow the same procedure as that of mango rice.replace mango with lemon juice.

MANGO RICE

Rice -1measure
mango-1
urad dal-1teasp
mustard-1tsp
curry leaves
dry chilly
INGREDIENTS
pr.cook rice with salt.heat oil in a kadai splutter mustard,urad dal , curry leaves dry chilly ,peanuts.fry well.add scrapped mango mix well.then add cooked rice and turmeric powder.close with alid and keep it for 15 minutes.
MANGO RICE READY

PONGAL

INGREDIENTS

sonamasoori rice 1 MEASURE

moong dal .5'' ''

ginger 1 INCH PIECE

pepper 1.5TSP

jeera 1.5TSP

curry leaves

Roast moongdal wash and keep it aside.

heat ghee in a pressure cooker add ginger fry well.then add moong dal ,rice fry weel and add 2.5 measures of water and salt.pressure cook.

Roast jeera and pepper. powder it add to the cooked rice

now add curry leaves and



chicken fried rice

INGREDIENTS

sona masoori 1 measure

chicken shredded 1 1/2 measure

pepper powder

spring onion

coriander leaves

refined oil

PROCEDURE

wash the rice and keep it for draining.

heat pressure cooker add oil and fry the rice .

add 11\2 cup water and salt.let it boil.now close the lid.

allow the pressure cooker to whistle once.switch off the gas.

pressure cook chicken ,salt and pepper powder.allow the pressure cooker to whistle 3-4 times.let it cool .now shredd the chicken properly

mix it with rice.add chopped spring onion and corinder leaves.sprinkle pepper powder.mix well.close the pressure cooker.keep it aside for 30 minutes.

Follow the same procedure as that of coriander but roast curry leaves and powder with other ingredients.(for 1 cup rice 15 leaves required)

pudina rice

Follow the same recipe as that of coriander.Replace coriander with pudina.

RICE

CORIANDER RICE
INGREDIENTS
Sona masoori rice- 1measure
for powder
jeera 1tsp
dry red chilly ''
urad ''
tamarind of your taste
garlic 1clove
fenugreek seed <1/2tsp size="5">procedure
cook rice with1.5 glass of water .keep it aside.
roast jeera ,urad dal dry chilly seperately
then smear the hot kadai with gingely oil and add tamarind piece of your choice.
powder all with garlic and turmeric powder.
heat oil in a pan add chopped coriander leavesand a pinch of sugar(sugar to retain the green color)fry for 30 seconds.
now heat oil and ghee(1:1)ratio add rice, powder andcoriander leaves.mix well.
coriander rice ready to serve
